TOMATO FRIED RICE


Ingredients:

  • Basmathi Rice - 1 cup
  • Ghee or Oil - 1 tbsp
  • Tomatoes - 5  (chopped)
  • Onion - 1 (chopped)
  • Peas - 1/4 cup
  • Carrots - 1/4 cup  (chopped)
  • Garam masala powder - 1/4 tsp
  • Ginger Garlic paste - 1 tsp
  • Pepper powder - 1/4 tsp
  • Coconut milk - 1 cup (thick)
  • Salt to taste 

Grind Together:

  • Mint leaves - few
  • Red chillies - 2
  • Coriander leaves - few
  • Cardamoms - 2

For Garnish:

  • Fried cashewnuts - 1 tbsp
  • Coriander leaves - few  (chopped)

Method:

Wash and soak rice for 5 minutes. Cook carrots and peas separately.

In a pressure cooker add basmathi rice, 1 cup of coconut milk and  1 cup of water and cook for 10 to 15 minutes. Remove from heat and allow it to cool . Separate the grains.

Heat ghee or oil in a frying pan and add spices when it is done add onions and fry till transparent. Continue frying with chopped tomatoes.

When it becomes pulpy add ground masala, cooked carrots and peas. Stir in low flame for 5 to 10 minutes.

Add cooked rice with enough salt and fry for 2 to 3 minutes or till rice becomes hot.

Serve hot garnished with fried cashewnuts and coriander leaves.
