 CARROT RICE


Ingredients:

  • Rice - 1 cup
  • Oil  or Ghee - 2 tsp
  • Grated carrots - 1 cup
  • Onions -2 (finely chopped)
  • Salt to taste

For Seasoning:

  • Mustard seeds - 1/2 tsp
  • Bengal gram dhal - 1/4 tsp
  • Green Chillies - 2 to 3 (finely chopped)
  • Curry leaves - few

Grind Together:

  • Coriander seeds - 2 tsp
  • Red chillies - 1
  • Cinnamon - 1/2 inch piece
  • Dry coconut powder - 1 tbsp

For Garnish:

  • Curry leaves


Method:

Wash and soak rice for 10 minutes. Cook rice and allow it to cool completely. Separate the grains.

Fry the seasonings in oil, add onion fry it till becomes transparent. Add grated carrots, fry till the raw smell goes. Add ground masala powder fry for 2 to 3 minutes.

Add rice and fry over a high flame for 2 to 3 minutes. Add powdered peanuts before removing from fire. Mix gently and garnish with curry leaves. Serve hot.
