 SWEET AND SOUR VEGETABLES


Ingredients:

  • Oil - 2 tbsp
  • Carrot - 1/2 cup (chopped)
  • Capsicum - 1/2 (chopped)
  • Cabbage - 1/2 cup (chopped)
  • French Beans - 1/2 cup (chopped)
  • Cauliflower - 1/4 (chopped)
  • Baby Corn - 1/2 cup (chopped)
  • Onion - 2 (chopped)
  • Green chillies - 2 (chopped)
  • Cucumber - 1 (chopped) (optional)
  • Garlic -8 to 10 flakes (chopped)
  • Spring onion - 2 tbsp
  • Salt and Pepper to taste 

For Sauce:

  • Vegetable Stock - 2 cup (or) Water
  • Soya sauce - 1tbsp
  • Tomato sauce - 2 tbsp
  • Red Chilli sauce - 1tbsp
  • Sugar - 1 tsp
  • Fresh Lime Juice - 1/2 tbsp
  • A pinch of Ajinomoto (optional)

 

Method:

Put all chopped vegetables into microwave safe bowl. Add salt and 1 cup vegetable stock or water  and microwave covered for 5 to 10 minutes at 100% power. Keep aside.

In another bowl, add oil and chopped garlic  and spring onions. Microwave for 5 minutes at 100% power then add the rest of the ingredients.

Mix gently and microwave for 5 minutes. Stir in between. Mix the steam vegetables in it.Cover and let it stand for 2 to 3 minutes.

Serve hot with fried rice or noodles.
