How to Make Tomato Chutney?

Ingredients:

  • Tomatoes - 1/2 kg (chopped)
  • Onion - 1 (chopped)
  • Oil - 2 tbsp
  • Garlic - 4 to 6 flakes
  • Ginger - 1/4 inch piece (thinly julienned) 
  • Onion seeds - 1/4 tsp (optional)
  • Sugar - 1/4 tsp
  • Garam masala powder - 1/4 tsp
  • Chilli powder - 1 tsp 
  • Soaked dates  - 1 tbsp (chopped)
  • Salt to taste

Ground Together:

  • Cashewnuts - 4 nos.
  • Mint leaves - few
  • Lemon juice - 5 drops (optional)

Method: 

Heat oil in a pan add onion seeds, garlic, ginger, onion ,ground paste and salt fry for 5 minutes in a low flame. Stirring in between.

Mix in the tomatoes, cover and cook for 20 to 30 minutes. Stirring occasionally.

Stir in sugar, dates, garam masala powder and chilli powder and cook for another 5 minutes. Stirring in between until the chutney becomes thick.

Let it stand until cool and use as desired.

 

Note:

A few sultanas (kismis) may be added to make the chutney richer.


How to Make Dates and Tamarind Chutney?

Ingredients:

  • Dried Dates - 500 gm
  • Tamarind - 1/4 cup (concentrate)
  • Oil - 1/2 cup
  • White vinegar - 1/2 tbsp
  • Brown sugar - 100gm
  • Chilli powder - 2 tsp
  • Cinnamon - 1 inch piece
  • Cardamoms -  4 nos.
  • Ginger - 1 tbsp (finely chopped)
  • Whole cloves - 1 tbsp
  • Chat masala - 1 tsp
  • Salt to taste

Method:

In a heavy large pan, add dried dates , brown sugars, vinegar, salt, oil, tamarind, ginger, chilli powder, cardamoms, cloves, and cinnamon. Cook over medium heat, stirring, until dates are soft, 40 to 50 minutes.

Remove from heat, add chat masala and mix well. Transfer into clean glass jars.

Store in a cool cupboard for atleast one week before opening.

Note:

The chutney sterilizes the jars and lids because the jars are filled, sealed and inverted while the chutney is boiling hot.
