 FRIED POLENTA

 


Ingredients:

  • Coarse or fine corn meal - 1 cup 
  • Olive oil - 2 to 3 tsp
  • Parmesan cheese - 20 gm (grated)
  • Salt to taste

For Garnish:

  • Lemon wedges

To serve:

 

Method: 

Pour the corn meal and salt into a heavy medium size sauce pan with 2 cup of cold water and mix to a smooth paste.

Place over a moderate heat and stir gently until the polenta is thick and comes away from the sides of the pan: about 20 to 30 minutes.

Spread the mixture on baking tray and allow to cool.

Heat olive in a frying pan. Cut the polenta into slices and fry on both sides until crisp and golden. Keep them warm in the oven if necessary.

Serve on a warm dish, with grated Parmesan cheese on top and garnish with lemon wedges.
